Mozzarella blocks

Company
This application was designed for a plant specialising in pizza cheese (mozzarella), ingredient cheeses and dry dairy products such as casein and powder. The plant belongs to the dairy division of a French agricultural and food cooperative group.
To increase productivity, the company decided to replace the pre-dicer and shredders on a mozzarella-block shredding line.
Project & solution
To meet this requirement, JYGA took part in installing a system for loading mozzarella blocks into the dicing machine.
The mozzarella blocks arrive from a distribution module. They are then picked by a robot fitted with a gripper designed for the blocks. The robot feeds the dicer by placing the blocks on a new conveyor.
The mozzarella blocks are then conveyed to a shredder and subsequently to a bagging machine.
